About this place
One cocktail here pairs spirits with dashi and wasabi oil. BEE’S KNEES’ Da-Shi Martini combines Nikka Coffey Gin and dry vermouth with dashi, wasabi oil and yuzu. A diner who tried it described it as a memorable, savoury drink.
For something beyond more familiar flavours, consider the mezcal-based Geisha Street. It brings together guava, pink grapefruit, passion fruit, yuzu Tabasco and soda, giving you a choice guided by fruit, citrus and spice. Both cocktails are listed at 2,500 yen.
For a whisky-based drink, try the Bee’s Fashioned, made with Michter’s rye whiskey, honey, beeswax and Angostura bitters. If you’re after a lighter combination of ingredients, the Southside Midori Fizz pairs Roku gin with kiwi, cucumber, mint, melon, lemongrass and hop soda. Both are listed at 2,500 yen, but their bases and flavours make for distinctly different drinks.
The menu also lists shots of Yamazaki 12 Year and Hakushu 12 Year, as well as Hibiki Blender’s. There’s the pleasure of choosing cocktails one by one, alongside the option to savour the character of the whiskies themselves. BEE’S KNEES serves drinks on site and also offers beer, wine and spirits.
